Thanks again for all the wonderful memories and gifts throughout the year! You are all amazing and I will never forget you. Enclosed is my last recipe: a nice, cold, summer treat. As always, all ingredients in this treat can be found organic and healthy!

Ice Cream Sandwich Cake

½ c. Fudge Ice Cream Topping

1 qt. Whipping cream whipped

1 pkg. Pudding mix

8 sandwich cookies

8 Ice Cream Sandwiches

Combine fudge sauce, 1 cup of whipping cream and dry pudding mix. Stir 2 minutes. Add ¼ c, milk if fudge sauce is too thick.

Crush sandwich cookies and fold into mixture. Place 4 ice cream sandwiches on a 24x12’ piece of foil. Layer fudge mixture and then sandwiches, repeat. Cover entire log with remaining whipping cream. Wrap log in foil and freeze at least 4 hours.
